Mornings in my house are wild—two toddlers running around, my husband trying to get out the door, and me attempting to keep breakfast from turning into complete chaos. That’s why I rely on easy, nourishing recipes like these gluten-free hemp protein waffles. They’re crispy, fluffy, and packed with clean, plant-based protein to keep us all fueled for the day.

I wanted to create a waffle recipe that wasn’t just a weekend treat, but something I could feel good about serving my family any day of the week. Ingredients:

    •    1/3 cup unflavored protein
    •    1 1/2 GF oat flour
    •    1 1/2 cup dairy free milk
    •    1 tbsp maple syrup
    •    1/4 tsp salt
    •    1/2 tsp vanilla extract
    •    1 tbsp coconut oil
    •    1 tsp baking powder

Directions:

  1. Mix all the wet ingredients together in a separate bowl until combined
  2. In another bowl mix together the dry ingredients
  3. Pour the wet ingredients into the dry mixture and mix until combined. Add more milk if needed. It should be thick but still pourable
  4. If using a mini waffle maker pour about 1/4 cup sized amount into the greased pan and cook until slightly golden on either side
  5. Top with fresh fruit and maple syrup
  6. Enjoy!
