I wanted to create a waffle recipe that wasn’t just a weekend treat, but something I could feel good about serving my family any day of the week. Ingredients:
• 1/3 cup unflavored protein
• 1 1/2 GF oat flour
• 1 1/2 cup dairy free milk
• 1 tbsp maple syrup
• 1/4 tsp salt
• 1/2 tsp vanilla extract
• 1 tbsp coconut oil
• 1 tsp baking powder
Directions:
- Mix all the wet ingredients together in a separate bowl until combined
- In another bowl mix together the dry ingredients
- Pour the wet ingredients into the dry mixture and mix until combined. Add more milk if needed. It should be thick but still pourable
- If using a mini waffle maker pour about 1/4 cup sized amount into the greased pan and cook until slightly golden on either side
- Top with fresh fruit and maple syrup
- Enjoy!
